Well, Jenny may be out camping by now if her original post holds true, but I'll throw in my 2 cents anyway.

Whenever I do a camping trip, I pack along a can or two of Vienna Sausages. A warning though, from what I can tell most people find them to be (at the least) an acquired taste.

I'm just sayin, I've carried these things to many a camping trip and many of my friends have moaned about how bad they were. Not that that's a problem. More for me.

Personally, I can't stand them. But the only time I've ever got a chance to try them, I'd had a cold. I should go out and get some more and try them again, but I'm too tired now.

Man, I wish I had noticed this earlier, when it would have actually helped. Oh well. I'll just suggest a couple of things that I didn't notice somebody else mentioning

Breakfast: Oatmeal is great camping breakfast. All you need is boiling water and some of them instant packets, you don't even need to measure anything. Just eyeball it. It's very filling and gives you plenty of energy for hiking and whatnot. Hot chocolate is also a necessity. Something fun is to take a paper dixie cup, fill it mostly up with water, and place an egg in it (salt if you wish). Carefully set the cup in the fire someplace level. Any part of the cup higher than the water level will burn, but after a little bit the water will start boiling. Wait 10-15 minutes and you've got a hard boiled egg.

Lunch: They make these small portable chicken and tuna salad kits. They have a can of tuna fish (or chicken) and a little packet of mayo and a packet of relish and some crackers and a little spoon thing. You just mix up the wet ingredients in the can and spread it on the crackers. Very delicious and light and convenient.

Dinner: If you are camping for less than a week, see if you can find some corn still in the husk. Peel the husk back (but don't take it off), rub butter on the corn, sprinkle on some salt, and then replace the husk. You can throw that right in the embers of the fire for 7 or 8 minutes (rotate at least once). Once the husk looks charred, pull it out and remove the husk. Delicious, but of course, you need something else to go along with this. If you're car camping, of course, anything in a can works.

Did anyone else do those hobo dinners when they were kids? You put ground beef, some chopped up vegetables and some seasonings and set them on two sheets of aluminium foil. Fold up the foil so that there isn't much air inside and crimp it up so nothing spills out. Throw it on the fire for 10 minutes per side or so, and it's delicious. Of course this needs to stay in a cooler or fridge until it's time to cook them.

I used to throw various foodstuffs in a dutch oven when I went camping to make stew. Dutch ovens are good to use if your just camping, but lately when I've camped, I've had to hike in to the camping spot which meant leaving the dutch oven at home.

I've always wanted to try making pancakes in an iron skillet over a campfire.
All you need is pancake mix, water and some sort of oil to cook it with.

I'm also interested in getting an army mess kit. Those things look awesome.

well now that i'm back, here's what we ended up eating :P

vienna sausages! (i did anyway... they are TEH PWN), hotdogs, pie-iron ham 'n cheese sandwiches, PB&J sandwiches, tostitos, granola bars, more hotdogs, Olive Garden (shh, it ain't cheating i swear), bagels, those mini camping cereal boxes

we were limited in cooking because we discovered there was burning and fire bans almost everywhere we went... so we mostly ate sandwiches or plain bread or whatever snacks we had on hand which was a lot.

and i do have a nice mess kit, that thing rocks... but that's what we use for backpacking, this trip we just used paper plates mostly

Olive Garden? Yeah! Next time I go camping, I am stopping by Olive Garden before I go and getting several bags of breadsticks. Those are TOO good.
