Well, the rhyming and the length of the lines makes it seem like the lines should be two lines each

You might want to go back and read the original post on this thread. It contains the rules, plus an example of what an Irish Drinking Song looks like. Part of the fun is that you're not supposed to have much control over how the lines and rhymes turn out (other than the lines you post). Let's not go changing the pattern after people have already gotten used to the one we use, please.
