(the sun's not big enough to become a black hole, because you need a supernova for that, which requires way more mass than the sun has)

People invent a type of water that's solid at room temperature and turns other water solid at room temperature too, and it gets dropped into the ocean, turning all the water on Earth solid and killing all life.

I haven't read the book that happens in, but it gets points for creativity.

Seriously, I'm going to be optimistic and go with "humanity has evolved too far to be called human anymore" as the most likely cause of extinction. Humans are good at surviving; a comet or nuclear war might destroy civilisation, but not necessarily all of humanity. "The sun goes nova" is a good one too.
